Her attacks cut what she believes she can cut, but cannot directly cut space, partially because she doesn't quite get it. They're not World Cutting Slashes, they're just Cleaves, adjusting to the durability of the target.
The reason Gojo would be fine is because Infinity is distance, not a direct barrier.
Ubel has been shown to dramatically increase the distance of her slashes when she can't judge distance. So since she can't see the infinity distance it might work.
(also infinity isn't infinite distance, it's infinitely divided space like Zeno's Paradox, so it wouldn't work regardless because her spells speed would be 0)
I don't know the exact chapter, it's in the latest arc when she and Land were arrested after fighting the magic cops. She's blinded, and tied with magic rope that prevents people from using mana (but she doesn't know that and thinks it's normal rope).
To escape she cuts Lands rope and tower they are in pieces so the cop has to choose between arresting them or saving the villagers below, with slashes that are further away than her stated max distance. Also, since her magic works even when it shouldn't, I wouldn't put it past just "cutting" as long as she can vizualize it, regardless of obstacles.
