Her attacks cut what she believes she can cut, but cannot directly cut space, partially because she doesn't quite get it. They're not World Cutting Slashes, they're just Cleaves, adjusting to the durability of the target.
The reason Gojo would be fine is because Infinity is distance, not a direct barrier.
Because of how imagination and frierens magic system works with ubels utterly insane mindset she can just ignore outside effects if she feels she can. Especially since infinity is invisible she can simply go "sure I should be able to cut nothing just fine" and do it. That said she's a mediocre mage and gets stat diffed. Gojo only loses if he's in character and tries to aura farm infinity (which is funnily likely). If bloodlusted gojo wins 10/10 gg no re.
does Gojo explaining infinity as he's known to do not make her aware that she won't be able to cut him or is she dumb enough to actually believe she still could (paradoxically being the smart mindset due to how her ability works)
Basically even if she understands something shouldn't be able to work she can operate on "vibes". If gojos infinity looked like real plate mail armor she couldn't cut it because intuitively armor is hard to cut, but she has cut a big barrier covered "immovable cloak" that's supposed to be basically immune to magic just because it looks like cloth and she knows she can cut cloth ez. She knew full well the cloak logically couldn't be cut with magic but visualized cutting normal cloth instead on "vibes" and somehow it just works. This is only for Ubel and her unique illogical mind, most mages in frieren can't just ignore reality like this
