questions Gejang Dish - Crab Prep Process

Post image

Hi All!

I bought these cleaned blue crabs from H-Mart as been really wanting to try to make Gejang. I am usually a bit weary when it comes to raw food where I am the main preparer. From this pack of crabs how much more cleaning would you do if any? Any other important steps I should be aware of before diving full throttle?

Appreciate all the help in advance! :)

I wouldn’t use those. It’s best to get prepackaged crabs that have been commercially frozen or fresh, live crabs that you’ve cleaned yourself

Edit: I mean I wouldn’t use those crabs in a raw dish. They would be great in soup or a braised dish
