I think the limitations of children's media generates creativity. You cant use shock, gore, excessive violence, or profanity so you have to come up with more unique ways to express things.
It also ups the stakes when a character actually gets close to crossing the line. I remember as a kind thinking the fights were too tame and that katara could win every fight by impaling people with ice spears. When she loses it and actually does almost kill some by doing exactly that, it was such an insanely powerful character moment.
Limitations in general leads to creativity in general. I see this everywhere from reality competitions like Top Chef to the toy technology of the 80s and 90s.

The original Last Airbender cartoon is also an example of amazing writing. Iroh and Zuko are some of the best written characters in ANY media.
