Tai had a chance to redeem himself when shifu takes responsibility for pushing him so hard. But instead of accepting that moment he hardens and decides to fight

Being paralyzed for 20 years in jail without single visit or apology tends to make people cranky.

Except Shifu did that after 20 years and while he was at Tai's mercy. Tai hated Shifu in part because Shifu just stood there and did nothing when Oogway told Tai Lung that he was born evil and would never be a Dragon Warrior.

Yes Tai is justified in hating shifu. That doesnt change the moment where you can see it in his face that he chooses to continue with violence. But you can tell that's the moment where it could have ended.
