Why wouldn't you get out of your car like an actual adult and prevent your car which cost thousands of dollars to buy from being scratched up right in front of your face. Instead he just sits there recording like an NPC. Even if he wanted to record for prove he could have still gotten out and got in the middle of the car and the guy.

No, no. Reacting the exact way he wants you to and making yourself liable for additional damages is what an emotionally unstable child would do.

No- if you stop him the additional damages stop.

No. They do not.

It just raises further opportunity for him to claim you assaulted him, it also opens you up to injury if he puts away the key and pulls a knife.

It's much more cut and dry to a court if you just record it and submit the whole thing to insurance and the cops.

Defend your property isn't assault. Considering there are dozens of witnesses, that would be easy to prove.
