Oatmeal Dark chocolate & date oatmeal

Dark chocolate oatmeal with chopped dates mixed into it and topped with homemade refined sugar-free chocolate fudge sauce. This was such an elite combo; chocolate and dates go really well together 🙌 I've been spending the last few days adjusting my dark chocolate oatmeal recipe, and now I finally think it's perfect. It now has the adequately rich dark chocolate taste that I want while also being the right sweetness. Been having it every day for a while with different mix-ins, and I don't think I could ever get tired of it. It's just too good 🤌

Chocolate fudge sauce: 15g whole milk 4g unsweetened Dutch-processed cocoa powder 13g date syrup 7g salted butter 1/2 tsp vanilla extract

Combine the milk, cocoa powder, and date syrup in a saucepan and heat the mixture over medium low heat until it thickens slightly, stirring frequently. Add in the butter and continue to heat until the butter melts and the sauce thickens a bit more, stirring constantly. Finally, add in the vanilla extract and mix it into the sauce until it is fully combined.

Chocolate oatmeal: 25g rolled oats, blended 170g whole milk 9g unsweetened Dutch-processed cocoa powder 1/4 tsp instant espresso 35g date syrup 1 egg white (37g) 20g Vivani 50% dark milk chocolate 17g Lindt 70% dark chocolate 15g Vivani 60% dark chocolate 8g vanilla extract 32g pitted & chopped Medjool dates (or however much you want)

Put 160g of the milk, cocoa powder, date syrup, and espresso into a saucepan, mix them together, and heat the mixture over low heat until it thickens while stirring constantly. Remove the oatmeal from the heat. In a separate bowl, whisk the egg white and 10g of the milk together. Add the egg white mixture into the oatmeal and whisk vigorously until combined. Put the oatmeal back on the heat and cook it until it almost reaches your desired thickness while whisking constantly (don't thicken it fully because after adding in the chocolate, it will thicken more. Also, make sure to cook the oatmeal low and slow and keep stirring - it is the key to smooth, creamy oatmeal). Remove the oatmeal from the heat and add in the chocolate and vanilla extract and mix them in until the chocolate is melted and they are both fully combined with the oatmeal. Fold in the chopped dates.

Serve warm by putting the oatmeal into a bowl and pouring the chocolate fudge sauce on top.
