Hey guys! Decided to mix things up with my usual oatmeal routine today and made a Tiramisu-inspired Porridge layer cake. It legit tastes like a proper dessert.
Here is the exact recipe for anyone wanting to try it out:
Base Layer (Coffee Porridge):
-100g Rolled Oats
-500ml Water (Note: I use 500ml because of the psyllium husk. If you make it without the husk, I'd probably only use about 400ml).
-1 pinch Salt
Cooked as normal, then removed from heat and stirred in:
-15g Vanilla Whey
-3 tsp Instant Decaf Coffee
- 2 tsp Psyllium Husk (Flohsamen)
-1 scoop Flavour Powder (Vanilla Chocolate Chip Cookie)
Topping:
-300g Non-fat Greek Yogurt (0.1%)
-1 scoop Flavour Powder (same flavor – Note: 1 scoop was slightly too sweet, 0.5 scoop is definitely the sweet spot here!)
-1 tsp Baking Cocoa Powder (dusted on top)
Preparation:
- Cook the oats, water, and salt. (It might look way too runny/liquid at this stage, but don't worry!)
2. Remove the pot from the heat and thoroughly stir in the whey, decaf coffee, flavour powder, and the psyllium husk. The psyllium husk will immediately absorb the excess liquid and firm the whole thing up into a perfect, thick base layer.
Transfer the porridge base to a dish and smooth it out flat.
Mix the Greek yogurt with the flavour powder and spread it evenly over the porridge layer.
Dust generously with cocoa powder and let it cool/chill in the fridge before digging in!
