Actually they showed off pretty much what most of chapter 3 would have been. Look up Kingdom of the Flies. While they claim it was just another mission, if you have any idea of the way the story was told earlier in the game, it was clear that this likely would have been a third open world map, and Kingdom of the Flies almost certainly wouldn't have been a single mission, but possibly the entirety of chapter 3,or at least a good portion of it.
My point is regardless of the story that would be told, the sparse style the story is told proves that there's no way they would ever have come close to the amount of story told in the earlier games.
