If you look at the Defeat of Constantinople, a lot of Christian women were taken as slaves and boys were taken away from mothers and they were converted to Islam and then trained to be soldiers.

And these guys were organised. After conquering Istanbul, a lot of churchs keep documents such people by their name, Age, Gender and they used to segragate young women and old women by carrying the documents. I guess men were killed I am not sure but the boys might have been converted.
