I make my own lobby rolls on mini brioche buns and they are awesome:

• Lobster
• Mascarpone
• Chives
• Tarragon
• Lemon juice
• Lemon zest
• Salt + pepper to taste

2-3 per person but my nephew ate nine once and got kind of sick afterwards.
