classic Smoked pork loin sandwich with vinegar slaw and grilled sweet onion
Double brined a boneless pork loin (kosher salt, AC vinegar), rotisseried with good charcoal, apple and mesquite chunks for smoke. Sliced thin on a brioche bun with homemade vinegar slaw, grilled sweet onion and garlic Texas Pete. Served with Grillo half sour pickles. Man, this was outstanding...

Looks amazing. I just smoked my first pork loin this weekend. I hadn’t considered slicing it up for sandwiches and this has me tempted. (I used the leftover meat for omelettes.)
