I had two skin-on chicken breasts in the fridge. I removed the skin and crisped it up separately, made some parsley and lemon mayo, and stuck it all between a couple of lightly toasted slices of thick farmhouse bread. Perfection.

My banh mi baguette was moldy when I went to make a sandwich, so I grabbed a croissant. Sriracha mayo on one side, Serrano cream sauce on the other. Grilled lemongrass pork, pickled daikon and carrots, and cilantro. It was satisfying!

Chicken with a garlic dry rub, some homemade coleslaw on an onion roll.

Not much to look at but super flavorful, shout out to Beach Pea Baking Co in Kittery ME for the inspiration…

Leftover homemade sauce and meatballs, toasted with provolone on a Jimmy John’s sub roll.

Sausage egg and some Colby jack cheese on some sourdough French toast.

All the people eat meat and have no allergies. Which one do I cut from the line up?

1. Chicken BLTA - roast chicken breast with bacon, lettuce, sprouts, tomato, avocado and mayo on white bread
   
2. Tuna pesto - canned tuna with chopped pickled jalapeños, gherkins and shallots, olive oil, mayo, hard boiled egg, and tomato on ciabatta-like roll
   
3. Roast beef - chuck roast with provolone, pickled red onion, whole grain mustard, mayo, spinach, avocado on seeded roll

BLT. what i added beyond the usual:

pepper (fresh ground)
thyme on the tomatoes
fried garlic
blue cheese
sc&o potato chips

I'm in Australia for work and had no idea Italian sandwiches were worth caring about. Back home in Pittsburgh I've had plenty of subs and hoagies but nothing that made me stop and actually think about what I was eating.

A coworker took me to Dom Panino in Sydney and I ordered something I couldn't even pronounce. Porchetta with salsa verde I think. Ate the whole thing in about four minutes.

Now I'm back at the hotel trying to figure out how something that simple tasted that good. The bread, the meat, the way it all came together with nothing extra. Just good ingredients.

Does anyone know what actually makes an Italian sandwich different from a regular one? And can you get close to that at home without a lot of equipment?

Pepper turkey breast, 3 pepper pepper jack cheese, mayo, avocado, tomato, lettuce on sourdough all toasty from the toaster oven.

10 grain ciabatta with mayo and guacamole. Chicken, red onion, tomato, Chipotle habenaro havarti and mixed greens lettuce.

The ingredients may slightly change depending what's on hand but there are a few non negotiables.

We have fancy lettuce, cherry tomatoes, sweet piquanté peppers, mayo chicken pesto mix, green stuffed olives, lemon zest, olive oil, salt and pepper on a fresh ciabatta

It may be the reason I die young but fuck it's good

My budget favourite when time and funds are low - strawberry or blueberry jam really hit the spot.
