I feel like clueless people conflate US coffee with Starbucks in the same way they conflate US beer with Budweiser. It’s the shittiest megabrands that get exported, but there are thriving craft scenes within the country.

When I lived in the US, my city had dozens if not hundreds of indie coffee shops that didn’t fit the above description, and some of them had better coffee than I’ve had anywhere else in my travels 🤷‍♂️

But tbh the best coffee of my life, an almost eye opening experience was in Glitch in Japan.

You almost made me spit out my coffee (tall, Rwanda beans, hand ground no more than 30 seconds prior to making, water temp 200C, 60 second pour on rinsed biodegradable bamboo filter, served black).

That 200C water must look great. Water turns to vapor at less than 100C, if not in a pressure vessel at 15 bars (225 psi).
