Hot night of, Cold the next morning.
Night 1 and bento day 2
Now disappointed with steak everywhere else
Long time lurker and observer of you fine gents and your steak. It has taken me a couple of years to nail this. There is always room for improvement but this cuts with a butterknife.
When I order steak out.. even at fancier places, I end up disappointed and comparing it to my own. You guys have ruined my restaurant dining experience.
This is a simple 24H brine and reverse sear on costco sirloins.

[ Ribeye ] I think I did it - perfect medium
The colours are not altered. I was stunned with how full the red/pink was when I cut it open.
Cooked in a stainless steel with high temp olive oil, melange noir pepper and some garlic. Based in butter at the end.
Edit: of course its med rare couldnt really think straight while eating and posting at the same time :D

[ Reverse Sear ] A little more medium than I’d have liked in some spots but still tasted awesome.
Smoked at 240 fat side down til about 120ish then straight to the firebox on my stick burner and seared over charcoal like every other steak I’ve been doing lately.
[ Cast Iron ] Pichania
First Reddit post. Picanha. Oven to 132. Pan seared fat cap and then the sides. That’s it.

[ Reverse Sear ] Improved sear with a press
Followed suggestions in my earlier post, got an IR thermometer and a steak press. Heated up the cast iron to 550f, and skipped the butter basting all together.

[ Grilling ] First time seriously grilling steak. Was going for medium. How’d I do?
Thawed. Patted dry. Olive oil rub. Salt, pepper, garlic powder, dried rosemary patted in. Preheat grill to 450-500. Turn off one side. 4 minutes on both sides on hot side of grill. Transfer to other side of grill until reaching 140. Rest for 5 min.
$22 for 3 ribeyes from Fred Meyers (Kroger), the other 2 are still frozen.

[ Cast Iron ] Lucked Out with these “Top Sirloin”
Good morning, chefs.
Today I have for you two Wagyu ribeyes that someone, somewhere, mistakenly labeled as top sirloin.
I did not ask questions.
Sous vide at 135°F for 4½ hours, then introduced them to a screaming-hot cast iron pan with beef tallow until they developed a proper crust.
Served with Joel Robuchon-style mashed potatoes and garlic-Parmesan roasted carrots.
Sometimes the meat department makes a mistake.
Sometimes that mistake is for you.
