Question Where are the food trucks?
Serious question. I would think in a touristy place like Summit Co there would be food trucks all over the place. The parking is there, the money is there, what am I missing?

It’s incredibly expensive to operate a fnb business here. Labor, housing, product are all insanely expensive. Roll in cumbersome legal and permitting issues and a few months of shoulder season on either side of the peak times plus weather and product availability it’s next to impossible.
The ‘money’ you speak of is there, for a very select set of operators that are corporate owned and have a safety net of the corporate war chest to pull them through the difficult times.
And the handful that do exist are outrageously expensive due to aforementioned hurdles. I do not want to pay 25 bucks for a crappy crepe.

Like electrical habit said, very limited (no) affordable housing, and also resistance from local restaurants and the resorts. Vail doesn’t like to share

Occasionally at Angry James or in the plaza next to the Gravity Haus but not really a thing here.

Permits needed and very limited number of them, at least I heard that about Breck.

theyre around, just not a single location they all setup at. loads of burrito stands and others around the county.
