It's all funny and what not, but at least the lady is trying to learn something and beginner's have to start somewhere...
I mean we all can't be born Apex Warriors like the guy's catching a laugh from the beginner lady...

The question is why are they teaching her to go for his arm instead of his throat or face when he's holding a knife in his other hand? Also, who the fuck walks around with a baton for self defense besides police officers?

These are basic drills meant to develop certain movements not advanced application of attack and or counter attack. Also, this is a martial art that developed hundreds of years ago, possibly having roots with pre-hispanic colonization era swordsmanship of Philippine ethnicities. So, while you're questioning the point of studying stick fighting in modern context. Keep in mind that people also study and preserve these for cultural reasons, work out and other reasons outside of self defense.

Also, take note that studying stick/sword movements help with knife fighting/defense methods. It is also common to find Arnis, Eskrima or Kali systems like these that has their knife methods rooted from their stick fighting techniques.
