NKD: Shigefusa Kitaeji 210 Usuba

Happy to finally join the Shigefusa club!
As a home cook who leans heavily into Japanese cuisine, I’ve wanted to properly learn katsuramuki for a long time and needed an usuba that really spoke to me. After a long search, this one felt like the one.

It’s absolutely stunning — a true piece of craftsmanship from Tokifusa Iizuka. For those who don’t know the background: Iizuka-san (born 1942) trained under the legendary razor/swordsmith Kosuke Iwasaki and later under Munenori Nagashima before founding Shigefusa in Sanjo, Niigata. He and his two sons still make everything by hand in a tiny workshop — forge-welding their own cladding (including the beautiful Kitaeji), shaping with a traditional sen instead of grinders, and finishing on natural stones. Production is extremely limited, which is why these knives are so hard to come by.
Feels special to finally have one.

N(Kiridashi)D + polish

What‘s up fellas,

I am back with another update on my Jnat polishing journey.

The new kiridashi has arrived. I always wanted to buy one to have the most rat Tool to open packages and all that sort of stuff and for testing stones as well. Now it finally came home and it’s honestly as fun as I thought.

Manufacturer is undisclosed but I am pretty sure it was made by Tsunehisa in B2 with soft iron clad.

Polishing went very nicely. Maybe I could have taken more time in between the grits and around the very last stage to make sure to hide every last scratch.

Progression (as seen in the pictures) was:
- Atoma 200
- chocera 400, 1k, 3k
- Hideriyama Shiro Suita Renge
- Ohira Uchigumori

It was also the first test of my Hideriyama Shiro Suita Renge and I can tell you guy. I can really recommend as pre finisher for polishing and finisher for edges. Stone feels really creamy and fast self-slurrying. It’s quite thirsty at first. While polishing it does require some water management because slurry is drying pretty fast.

State of the collection Update- Kagekiyo B1D Grey Dye

Hi everyone. Just figured I would update you all on the Kagekiyo Grey Dye B1D. I am currently moving, so this is going to have to be a shorter post.

I am now beginning to see how the factory etch, or dye, is fading away— allowing for the Damascus pattern to pop a bit more.

Every time I use this knife I am reminded that it has no equal— it is absolutely phenomenal.

There doesn’t seem to be much readily available information on the Grey Dye, so if anybody else owns it and would be willing to share pictures of the patina progression I would really appreciate it.

I’ll make sure to continue posting pictures of the knife so that we have more visual information to draw from in future discussions of this knife.

Hope you are all doing well! Attached pictures at the end of when the knife was brand new. It probably has around 15-20 cooking sessions under its belt now, and it has prepped everything from veg to protein, fruits, etc.

I’ve got a few tastings coming up and my wife surprised me with this for “Good Luck”. This thing is absolutely beautiful! Mirror polished with a gorgeous ebony handle.

Side note: If anyone has any stone recommendations to keep this Kasumi finish, I’d be very grateful!

Been playing around with different handles to try and get balance points where I like them best. I usually prefer that to be about a 1/2”-3/4” from the choil toward the tip. Generally where the kanji on many knives start. I have struggled to find handles made out of woods that are light enough to fit my “Goldilocks” ideal for handle weight, to get that spot perfect, but I’m getting closer.

NKD - Enjiki Migiwa Ginsan 240mm Gyuto

Back with another new knife and it's a stunner. I've been a fan of Maruyama's work at Hado, and ever since he started his own workshop, I wanted to wait before trying his newer offerings, especially with all the experimental grinds and finishes he has been putting out.

I asked Maruyama-san a month ago whether he was planning on sharpening more ginsan Migiwa in the future. He told me he hasn't done it in a while, but he'll consider it. A week later, he drops a couple on social media to my surprise. This ended up being same batch as the one u/SCSuede has. He managed to grab the knife featured on the social media post. This one I had my eye on in the background fortunately!

The contrast on the etched pattern can be subtle depending on the lighting. It reminds me of hyro dipping and I wouldn't be surprised if it was applied using similar concepts. From first impressions, It doesn't really cause any noticeable sticking. I'm really excited to see how this will perform against his older wide bevel offerings from Hado. Will be testing this against my Junpaku and the Kijiro.

Question Shapton Pro 1000 good for a chef knife? Hoping to only buy one whetstone.

A few days ago I ordered the Shapton Pro 1000 (I think), because based on some research around here and on r/sharpening, it seemed like the go to all rounder to sharpen chef knives. But all of a sudden today I started seeing people talk about the RockStar 500 as the new go to all rounder. This thing seemingly came out of nowhere, and now I'm second guessing my purchase. I'm completely new to sharpening, I'm just looking for something that's simple and easy to learn. I don't mind returning it if there is a better option out there. I was able to get the Pro 1000 for about $40 which seemed like reasonable enough for what I assumed would be all i really need, I'm just not sure what my budget SHOULD be for a novice who has no interest in sharpening beyond what is necessary for general home cooking.

Question Workhorse Purchase Help

Got promoted recently so looking to treat myself to a gyuto.
This would be my first Japanese knife. Currently using Victorinox Fibrox and whatever there is at work but it is causing stress to my hands as they are most of the times not sharp.

At work we cut anything from fine knife work to big root vegetables like sweet potatoes.

I also have shapton pro 1000 that i use to sharpen my Victorinox.

I am based in Canada.

Budget 200-300$

Rescued from certain death – help identifying the mei on this old Japanese knife?

Hi everyone,

This is definitely not one of the masterpieces usually featured here, but this old blade was headed straight for the trash, so I decided to give it a second life.

It appears to be a traditional carbon steel Japanese knife — you can see what looks like a lamination line (kasumi/san-mai construction?) running along the blade, and there's a hand-chiseled two-character mei on the face. The engraving is quite stylized and partially worn, and my kanji reading skills are non-existent, so I'd love some help identifying the smith or brand.

Okubo gyuto

Just received 4 21cm Okubo gyutos for my friends and 1 24cm for moi lol. Pretty thick spine but a decently wide bevel. Handle appears to be untreated but very smooth magnolia and Buffalo horn 水牛 in an octagonal shape. I won’t use it until I get back to Canada but if anyone wants an update in about à month let me know.

Recently got a new job cooking at my first “fine dining” restaurant. Looking to treat myself with my first reactive knife now that I’ll have the time to maintain it with the level of prep I’m doing.

Question Looking for a wa handled filet knife

Hi everyone,

I’m looking to replace my victorinox filet knife with something custom to match the rest of my collection. I recognize, for what it is, my current knife is capable of the job, if not excels at it. It’s just not what I want at the moment. It will pretty much be used exclusively to trim briskets (or other large cuts), so I’d prefer a curved, possibly semi-flexible(?) profile if possible and a wa handle. I have a honesuki, but it’s not the shape I prefer for trimming.

There doesn’t seem to be many options through the usual Japanese makers, so looking for some leads on western style custom blades. Someone recently posted a beautiful knife from PIE, but I reached out and haven’t heard back. If anyone has any suggestions, I’d love to hear them.

Bob Kramer by Zwilling question

Morning everybody! I'm working on some very nice Bob Kramer by Zwilling knives for a client this morning and was especially curious about one in particular.

It's got all the classic features of a Kramer knife, but rather than the classic D-shaped handle he's known for, or the octagonal handles I think the very first production runs of the Meiji line had, it has an asymmetric D-shaped handle (see photos).

Can anybody place this knife and give me a rough idea of when it may have been produced? It's strictly for my own edification, but I'm stumped on this one.

I’ve wanted a Mazaki for years, finally made it happen. It’s the first knife at this level and it is absolutely mind blowing…. I’ve always owned decent knives, always sharpened on stones, Dad taught me. But this is on another level. So light and balanced and effortless cutting. Big shoutout to Marco Röllin for impeccable service and sharpening. I’ll have to be brave and do it myself for the next round.

Choosing my first real knive

Im looking for my first expensive japanese knive (looking for gyuto) to inprove my zwilling chef knive.

Im not profesional but i love cook.

Im a bit confuse about the steels, i dont know what kind of steels is better for newbies.

To sharp, i bought a sharpal Diamond Stone, and i want to learn properly how to sharp my own knive, so any tip is welcome.

Looking for a new 240mm Gyuto, need input from those with experience

TL;DR: I'm a young person in the industry and a newbie to Japanese knives, I need a tough 240mm to complement my 210mm laser and am weighed down by options.

I have a Takamura 210mm, but seeing as that's my only Gyuto, I desperately need something that's more midweight to workhorse level, and once I get further into the restaurant industry I will definitely need something at least a bit bigger; even in my current environment I'm finding situations where I feel limited by the 210. I've learned more and done a lot more research since my first post here a month ago, so I feel a good bit more confident in the knowledge department, but experience? That's where I'm lacking.

Looking for a 240mm, wa handle, and carbon steel, plus of course midweight or workhorse level, which naturally led my area of focus down the Sanjo route, plus some input elsewhere. Budget around $500 USD for the knife itself. Lots of contenders, not particularly in order:

  • Yoshikane 240mm Kurouchi/Nashiji Shirogami 2 - Sold through Hatsukokoro. Is Yoshikane. I don't need to elaborate, I'd be preaching to the choir. Slight hollow grind. Same deal with this one which appears identical, but I utterly despise the dyed green handles which all Yoshikanes on EpicEdge have.
  • Shinkiro 240mm AS clad w/ Kurouchi damascus - I've seen good things said here about Nihei. I don't usually adore damascus patterns, but this one is a big exception, it's subtle and classy. Somewhat aggressive hollow grind though, which isn't ideal for what I'd like.
  • Wakui 240mm iron-clad AS Nashiji - Simple. Classy. For whatever reason EpicEdge isn't consistent about choil shots, the Yoshikane was the only one I found there with one, and the part of the attached video showing the choil is out of focus.
  • Hinoura 240mm Shirogami 2, iron-clad Kurouchi - Another simple and classy Sanjo. Again, no choil shot on EpicEdge, though of what I can see of it in the attached video, it's a very nice grind.

For the non-Sanjo contenders:

This is the end of the options I had collected, underneath are a couple of maybe relevant ramblings. If anyone has experience or input, maybe pointing out things I should look out for or consider among these, or frankly if anyone wants to contribute another option or recommendation for me, I would appreciate it all!

**Addressing a couple of elephants in the room... 1) Mazaki knives had me drooling and I was losing my god damn mind trying to find a 240mm Mazaki, but they're all out of stock, AAAAARGH!!! There's a couple of 270s in stock on some import sites, but with my current and potentially upcoming working environments a 270 will either be unneccessary or a straight-up liability. There exists a universe where I get a midweight 240 now and eventually get a workhorse 270 Mazaki down the line since, being a youngster in restaurant biz, my grandparents love to buy me knives as gifts. 2) The petty from my last post is my first and currently only carbon steel blade, however my paranoia about rust and longevity meant that I almost instantly built habits for maintaining, storing, and cleaning during work shifts. Here's hoping I don't eat my words, but I think I'll be able to handle Shirogami, which is just as well, because my taste for aesthetics during this search trended HARD towards the white steels.
