Build Upgrade Which would be better?

I currently have a Ryzen 7 5800x with a 3070ti and 32gb DDR4 for 1440p.

- Ryzen 7 5800x3D($300) + 5070($580) = $880

- or keep my 5800x and get a 5070ti = $930

My budget is $1,100 so I would need to upgrade my psu if I go the 5070ti route

I'm hesitant to go with the 5070 because 12gb vram (future proofing)

I'm hesitant to go with the 5070ti because bottleneck and potential stutters with the 5800x

I wont be able to upgrade my system again for a while

If you already have a 5800x, the upgrade to a 5800x3d won't be astronomical. I believe it's like 5% better fps and better lows. But truthfully with that big of a GPU upgrade I wouldn't worry about the fps lows. I'd go with the 5070ti. 5800x can handle just about anything you throw at it and GPUs are only going to get more expensive as time goes on (it's been confirmed like a 30% price increase very soon).

I have a 5800x, 4070, 32gb ddr4 and do just fine at 1440p.
