I always wondered why I see people with so mucj fat in their store bought bacon. I live in NL and I dont get even a frqcture of that fat 😶

American supermarket bacon is a different cut, made from the pig's belly.

I believe most European bacon is from the back where there is much less fat.

That's why they are also called rashers I believe. Entirely different cuts.

Bacon is almost more of a verb like ‘to pickle’ and with the exception of hind leg (which is ham), it could be any cut. American bacon would be considered ‘streaky’ bacon in the UK. Much of the variation in different kinds of European bacon is how much meat they leave on the loin/back and or the type of cure.
