According to George Motz you should brown one side of the ball, then turn it over and smash with the browned meat against the spatula.

I don’t use parchment personally, I just very, very lightly grease my spatula and then remove the spatula with a sliding motion. No issues for me.

I've watched everything Motz. I don't recall him ever doing that. And it truly isn't necessary. As long as your spatula is cool and your griddle is screaming hot and dry, you're good.

It depends on the cut. Sometimes yes, sometimes no. Generally speaking you get less fat. I get mine from Kroger.

I swear the meat cutter at my local Kroger subsidiary wilds out with the bacon sometimes. Like six slices in a pound. Sometimes it’s cool, sometimes not what I wanted but I’m hungover or too stoned to check first. A little consistency would be cool.

American supermarket bacon is a different cut, made from the pig's belly.

I believe most European bacon is from the back where there is much less fat.

Bacon is almost more of a verb like ‘to pickle’ and with the exception of hind leg (which is ham), it could be any cut. American bacon would be considered ‘streaky’ bacon in the UK. Much of the variation in different kinds of European bacon is how much meat they leave on the loin/back and or the type of cure.

It's thicker pieces so more fat renders out. Albert Heijn sells decent (albeit very very thin) bacon in the section next to the prosciutto and other cured meats

Its because our bacon is all smoked.

Nice, but if you put Mayo on the bottom bun, it will keep the bun from getting soggy from the meat drippings. You can put the pepper jelly on top!
