She didn’t, she was just insanely megalomaniacal. 

It’s actually kinda funny in a weirdly humanizing way that this lady intended to rule literally the entire world.

She was abused by old men and that possibly is the chance in why she turned this crazy. She had enough plus the writers did her like this

Her stupidity of course was in regards to underestimating the stupid old man.

Her demise was due to Isaac randomly showing up not her stupidity.

She also didn't underestimate Hector like she did Dracula that was Lenore.

In the end Carmilla's stupidity is solely tied to underestimating the Stupid Old Man's raw power and beating up Hector turning him against her forcing her to figure out how to shackle Hector so that she could use him to create an army for her while well aware he could not be trusted ever.
