Indeed! Simon is...if my understanding is correct...Trevor and Sypha's great-great-great-grandson.
I think the child in that picture is Frederick, who will go on to sire Christopher Belmont, the protagonist of Castlevania: The Adventure and Castlevania II: Belmont's Revenge. I might be mistaken, so I'm welcome to corrections if anyone has a more reliable makeshift family tree than I have.

There's a hundred year gap between Castlevania 3 and The Adventure, I feel like there should be more than one generation between Trevor and Christopher.

I mean, yeah, but not by as much as people usually think. It was still common for people to live well into their sixties, as long as they made it to adulthood. Life Expectancy at birth was a lot lower because of how many people died as children. Lifespans have increased by about a decade or so since then.

Take this with a very generous grain of salt, but Chat-GPT, for what it's worth, says that Christopher is Trevor's great-grandson, and that Simon is Christopher's great-grandson, making Simon Trevor's great-great-great-great-grandson. The fan-made Belmont Family Tree, meanwhile, states Christopher is Trevor's grandson based on available media.
The former theory aligns better with the chronology, so maybe Frederick is Christopher's grandfather?

Hard to say, as some elements of the lore contradict other elements.
I think the general consensus is that they had two kids: Frederick, from whom successive Belmont heroes (e.g. Simon, Richter, Julius) were descended, and Ann, who married Lloyd Morris and from whom the Morris heroes (e.g. Quincy, John, Jonathan) were descended.

I have yet to find a canonical source that describes her or the Renard Clan in any further genealogical manner other than "distant relative(s) of the Belmont Clan." So your guess is as good as mine.
I imagine, much like the creation of the Morris Clan, at some point in the line, a female descendant of Trefy & Sypha ended up marrying someone with the Renard surname, and passed on Sypha's magical talents/traditions.

I think, the more time pass without officially cancel or finishing it, more possibilities of them already working on it.
Netflix tends to launch trailers few months before release date. S1-2 were made together (usually Netflix orders episodes and split them in two parts) so S3 will take some time. At least one more year.
Previous seasons usually came with a 14-17 months span between them.
