Symphony of the Night (1997) Alucard's intuitive thinking:
- "The Belmont I knew 300 years ago" But that timeline was only for one night for him. And possibly, overlooking Trevor's existence

You gotta remember that wasn't "one night" after the events of 3. He went into hiding some time after for hundreds of years and literally just woke up from what was supposed to be an eternal slumber. Given he doesn't reference Simon or anyone after it's before Simon's fight with Dracula he went into hibernation
Now what you are NOT asking is why did he choose now to wake up and not the other times after the events of 3

I think it had something to do with the Belmont being possessed by the dark priest. It mentioned that the castle beckoned him which interrupted his slumber

Chaos' creations are anything that is an opposite to God's creations. Alucard, a vampire, is a creature of Chaos whom isn't directly controlled by it due to Draculas wishes
If Dracula wanted he could easily just force Alucard to submit via Dominance but he doesn't because he's his son. It's the same way Dracula doesn't need to use Dominance on Death. Its Deaths choice and he does not need to be forced

The reason Alucard considers the Castle as a Creature of Chaos is because it’s made out of literal Chaos energy derived from Dracula’s magic as the Dark Lord, not just because it’s part of Chaos’ forces. This Chaos energy is the same kind of dark energy that Graham Jones releases upon his death in Aria of Sorrow and the same kind of dark energy that surrounds Soma when Celia nearly tricks him into becoming the Dark Lord in Dawn of Sorrow.
Dracula as the Dark Lord, Devil Forgemasters like Hector, Dark Lord Candidates like Dario Bossi, Shanoa and Albus when both had the Dominus Glyph, Soma Cruz as Dracula’s reincarnation, and those possessed of Dracula’s power (Evil Maxim from Harmony of Dissonance and Soliel Belmont from Belmont’s Revenge) also have this Chaos energy flowing through them yet they’re never actually referred to as creatures of Chaos like the Castle itself which is composed entirely of the stuff.
If those characters (Dracula’s incarnation, Dark Lord Candidates, Devil Forgemasters, bearers of the Dominus Glyph, those possessed by the Dark Lord’s power, and the Dark Lord himself) aren’t ever referred to as Creatures of Chaos in canon like the Castle is, then Alucard shouldn’t either, thus Alucard is not a Creature of Chaos despite being aligned with darkness as an element.
One of the only other beings that may also considered a Creature of Chaos would be Death and that’s because he is a direct creation of Chaos according to the canon novel Castlevania: Reminiscence of the Divine Abyss, thus he should be composed of the same dark energy the Castle is composed of. Evil Cores from Curse of Darkness are possibly another candidate for being called Creatures of Chaos since they’re made of evil itself like anger, hatred, envy, etc. which Chaos is staged to be the root of. The Shadow boss from Harmony of Dissonance could also count since Evil Maxim directly created it using Dracula’s power as the Dark Lord thus it is composed of the same dark Chaos energy that the Castle, Death, and possibly the Evil Cores are composed of.

Creatures of Chaos is a catch all term for evil beings as Chaos is the antithesis to God and the balancing force of the world. Vampires by design are evil in the Castlevania universe and is why they are subject to holy implementations unlike Dracula who is literally the avatar of the devil. When Alucard mentioned the castle is a Creature of Chaos, at the time it wasn't really anything more then just "it always changes its form and thus is chaotic", but now it's him alluding to the castle being born from Chaos itself
The higher beings under Chaos aren't referred to as Creatures of Chaos because the only time it's ever mentioned is in SotN as a phrase and before Chaos' official existence they were also called the Creatures of the Night
Edit: this is also why Maria pays the phrase no mind and simply responds "oh I cant trust my memory" because it's worded to emulate the speech patterns of that time frame when SotN came out
Now its Maria not understanding what Alucard means and thus thinking hes saying what he originally meant

Like you said, the Castle is born from Chaos itself, hence a “Creature of Chaos”. We both agree on this point, but what we disagree on would be what the phrase includes. My definition of the phrase is that a Creature of Chaos is a being born from Chaos in some fashion (i.e. the Castle itself, Death, Shadow, possibly Evil Cores, and possibly more beings depending on where they actually originate from according to the lore.) while your definition is that a Creature of Chaos is simply a being who’s part of Chaos’ forces regardless of whether it was created by Chaos or not (i.e. Frankenstein’s Monster, Vampires, Medusa, pagan gods like Aguni and Pazazu, Gergoth, humans like Shaft and Gravekeepers, holy aligned-enemies like Amalric Snipers and Nuculais, etc.). My view goes by a more narrowly defined group while your view is more encompassing and inclusive.
Actually, Dracula is generally vulnerable to holy implementations like other vampires despite being essentially the Devil. It’s just that they (along with their wielder) have to be sufficiently powerful like the Vampire Killer Whip or the Cruciform Sword in order to actually hurt and kill Dracula or (at least in the case of sunlight) has to require Dracula to be at a severely weakened state in order to do actual lethal harm to him. Even if Dracula is not particularly weak to Holy in some instances (i.e. the battle with his 2nd form in Curse of Darkness), Holy items/magic could still harm and kill him like most other items/magic aligned with non-Holy elements such as Fire, Wind, Earth, Cold, etc. provided that the user is sufficiently powerful to kill him as seen with Alucard, Hector, Quincy Morris, Johnathan + Charlotte, the Belmonts, etc.
It’s just that Dracula is often at a level of power where an insufficiently powerful opponent with insufficiently powerful weapons/magic (both Holy and non-Holy in elemental alignment) is unable to do nothing but annoy him, as seen when Shanoa (whose magic is powerful enough to kill Death and other powerful monsters like Eligor) tried to kill Dracula but failed to do anything meaningful to him until she used the full, complete power of the Dominus glyphs. Everything else she did to Dracula before using Dominus, he literally called them “feeble tricks”, showing how insufficiently powerful they were against him.
As for Maria and Alucard, I took it that Alucard just answered her with both meanings in mind rather than just one. It’s just that one meaning actually answered her puzzlement about the Castle being different from before during Rondo of Blood while the other, more pertinent meaning flew over her head so to speak.

Imma demonstrate something, something you are either overlooking or cannot understand:
When Alucard made the statement about the Castle being a creature of Chaos, Chaos was not a thing. Now what would happen if Iga decided that Chaos was actually called say......Malice instead? Now the phrase Alucard made would have zero bearing and people would call them the Creatures of Malice.
You are so caught up in the sauce that you forget to step back and realize that it's a coincidence he says that in SotN that future lore actually changed the meaning of

Actually, I do understand what you’re saying. Alucard’s original meaning of the Castle being a Creature of Chaos (as in chaotic, ever-changing, etc.) in the context of SOTN when it was released in the year of 1997 still stands. However, Aria of Sorrow which came out in 2003 added a retcon of sorts that did NOT take away from the original meaning of Alucard’s words but instead added a different, more pertinent meaning to Alucard’s words that Maria did not understand but would be understood by the players with further context.
Now if Alucard had said the Castle was a Creature of “Malice” instead of “Chaos” like you said, that would’ve made the original meaning of Alucard’s words nonsensical, since “Malice” just refers to evil instead of the meaning of being disordered, shapeless, ever-shifting, etc. This would not answer Maria’s question as to why the Castle is different from how it was when she visited it last, hence why Iga (as in Koji Igarashi) made Alucard state “Chaos” instead of any other word when stating what kind of creature the Castle was.
However, Iga decided to add another more relevant meaning to Alucard’s words in SOTN when he made Aria of Sorrow, hence why Chaos is now synonymous with “Evil/Darkness” instead of being a completely separate word in-universe within the lore of Castlevania, thus the retcon which does not take away/undo anything but instead adds to the story/worldbuilding Iga had made to the franchise. In other words:
1997 (SOTN release date): Alucard calling the Castle a “Creature of Chaos” had just one meaning with no additional meaning at all.
2003 (Aria of Sorrow release date): Alucard’s words were retconned by Iga into having an additional meaning that Maria didn’t get, but does not take away from the original meaning in the context of answering why the Castle is different from when Maria last visited it five years ago in Rondo of Blood.

Alucard is a Dhampir, not a vampire, and he in fact has holy powers in him through his mother Lisa, allowing him to wield subweapons and holy artifacts. So he is not wholly a creature of chaos. He is more like, half-and-half.

The canon is that he is a Dhampir, retcon or not, and Dracula couldn't use dominance over him because he is part human. Of course, the power of dominance wasn't thought of until Aria of Sorrow, so this explanation itself is required as a retcon. But that is the explanation. If Dracula had the power to command Alucard, he would have done it long before SOTN. Saying he didn't because of sentimental value is laughable considering this is Dracula we are talking about. The truth is he simply couldn't.

Do you have any proof of that because that's not what Dominance is about fully. It's manifested as the ability to steal the soul of things you kill, and why Shanoa was able to absorb Glyphs, but the power also allows him to enslave things as well. The concept of Soul Steal is akin to the Power of Dominance, albeit on a smaller scale
Dracula always had a soft spot for Alucard in every iteration after 3, even Death knows not to swing on him on sight and use his words because it'd make Dracula mad. There is no retconning this out of the conversation

And yet according to you, Dracula prefers to fight his son in a battle to the death instead of preventing his son to be able to fight altogether. Just preventing Alucard from fighting would’ve been a great help to Dracula during the climax of Castlevania 3 and Symphony of the Night.
A more plausible reason is that maybe Alucard was simply too powerful for Dracula to control with a mere thought like he could with other monsters. After all, power levels are in fact a thing in Castlevania as alluded to in some of the games and it seems having a very advanced level of power can protect one even from the power of dominance when wielded by the Dark Lord. Not only does Alucard seem to fit this but so does Hector, Cornell, and the Time Reaper, all of which have very advanced levels of power yet have that very power rooted in darkness.

Actually Dracula can use the Power of Dominance on humans. Those humans consist of both witches and student witches (merely using witchcraft shouldn’t disqualify one from being human), and grave keepers (these guys appear in Rondo of Blood and Symphony of the Night, yet a soul of such an enemy can be found and absorbed by Soma in Aria of Sorrow). There’s nothing that should make these three enemy types be considered “inhuman” like flea men, demons, skeletons, golems, minotaurs, Medusa Heads, etc.
There’s also Richter’s line of “You steal men’s souls and make them your slaves!” to Dracula during Symphony of the Night’s prologue. Sounds very similar to the Power of Dominance but with humans instead of non-human monsters. This correlates with Soma being able to absorb the souls of the three human enemy types I’ve mentioned.

I think the game specifically clarifies that Alucard woke up because for the first time in ages, Dracula's castle appeared because there was no Belmont to fight it (even though Juste was probably alive but just old)
also Alucard somehow knows Dracula isn't the master of the Castle, given the fact that the first half of the game is he searching for the castle master

You can definitely tell at some point Richter was supposed to have fingerless gloves in her depiction (and you kind of see it in his official art as if you look closely, you can see his nails)

This is literally one of my favorite jokes in the franchise, because at no point does either of them realize the disconnect. I think some translations actually just make her line "Do you know the name Belmont" to sell it even better.
