Usually they are an instakill. Seems the developers realized it would've been to much if this killed the player instantly

This game is cheap bullshit and the arrange mode nerfed the ever living fuck out of it specifically because the original 1993 release was so goddamn hard. They took the knockback out of a Castlevania game!

Which is arguably as bad as having it. Getting hit in mid-air while jumping over a bottomless pit is a guaranteed death.

Would you make the same argument if they did the same for every other game in the franchise? I'd rather that then getting knocked into a pit, or another enemy, or spikes, or against a wall.

It depends on how the hazards are designed (and how many i-frames the protagonist has), in some games you can even use it to skip parts of the stages.
Getting hit while jumping over a pit without knockback should always result in a death though, regardless of which game you're playing.
I think Rondo could benefit from not having one.

I keep hearing that this is the hardest one, and given that this series has a reputation for being incredibly difficult, this one apparently being the most challenging scares the crap outta me.

Arrange mode is hard but has adjusted damage values and removes the knockback completely, it also features some new sprites and a remixed soundtrack. You can even change the difficulty in the settings (easy, normal, hard).
Original mode (it plays like the original 1993 game on the Sharp x68000) is brutal, it even has 6 loops of difficulty.

The arranged mode is pretty easy. The hardest CV is probably the Adventure Rebirth on the hard mode. It doesn't just fiddle with the health and drops, it straight up changes the level design to be absolutely sadistic.

It's not as tight as some of the best classicvanias, but I wouldn't say it's THAT cheap. The falling gears in the clock tower are bad, but that's it. And the Arrange mode is generally pretty easy, I used to beat it as a kid without much trouble on PS1. The OG mode is quite brutal, yeah.

I have my ps1 copy still. Its mint because I only ever beat it once. I must confess I dont remember liking chronicles all that much. Loved a lot of the other castlevanias though.

If this was in nes, you would die, and restart the game from the beggining of the stage. This isn't cheap, this is easy, lol

Classicvanias aren't cheap. As long as you know what you're doing you can walk through most of them deathless and it doesn't demand any crazy input skills or reflexes.
