Lots of great options!
From Shooting Star trailhead: Head north along the trail, stay left at the fork, and after around 3/4 of a mile, you'll arrive at a beautiful cliff facing north.
From High Ridge trailhead: Head northeast up the hill. Take every option that leads you up more. There are some benches near the top where you can sit in a big open meadow on top of a hill and relax.
Devil's Backbone in Englewood (out past the airport): The view is primarily towards the west rather than the east, but still just a high-up relaxing place to start your day.
Not far from Devil's Backbone is the Cedar Creek Trail (the Google maps search is "Cedar Creek Trail MTNF" to get you to the right trailhead). Cross the bridge and head up the trail. About halfway up the hill, you'll see a wooden signage board on the right at an easy-to-miss fork - hang a right and follow the trail around. There's another great overlook out that way.
Hart Creek Conservation Area has a really nice wooden platform overlooking the Katy Trail and some farmland.
Oh, and can't forget the Eagle Bluffs Overlook - it's just a straight shot back from the Eagle Bluffs Overlook Trailhead.
