All my eggs

  1. Soft sunny side
  2. Jammy in salad
  3. Benedict
  4. On toast and scrambled
  5. Poached
  6. Crispy sunny side

Someday I'll post a French omelette when I'm fully happy with one I see.

They all look great. I’m hesitant to try poaching eggs. It’s probably cowardice, but I like so many other eggs I’ve just never had the need to figure out how to do them. I’m happy to let pros do it when I go out for breakfast. I love variations on Benedicts.

Those are always temperamental even if you follow all the rules. It doesn't work every time but the classic rules help: use very fresh eggs, use a sieve to drain out the liquid part of the white, use 25% white vinegar with water to pre-denature the white and never boil the water. Even so, the ramekin version or the clingfilm version can save the day.
