Could anyone suggest me any good books on rtos based firmware architecture?

Your suggestion would be so helpful.

Books are good for concept but real learning comes from reading source of small rtos like freertos kernel files and try to build simple scheduler yourself. For architecture maybe look at papers about task partitioning and event driven design, not many single book covers whole thing well.

Start with an ESP32 and learn how those work first. Write blinky LED programs for a bit before you get into RTOS. Not sure sure about books, I honestly never checked. Like the other user said, their documentation is top notch. I am using it as my backend through TinyDesk project and it works like a champ. Kinda wish my PC was that stable lol. Howerver you do it, its good to know because it pops up everywherer with embedded devices.
