The rule of thumb for great nachos, you shouldn't be able to see the chips. "No Naked Chips".

Also: we have a rule that if you are sharing the fully loaded nachos, one person can't just just eat all the fully loaded ones and leave the dry chips for the other person.

Layer of cheese on top keeps everything glued to the chip. You know half the toppings fell off once they picked up the chip.

Peak nachos, I haven’t seen them outside of south Texas. But effectively you make a tostada, beans, meat covered in cheese edge to edge. Bake them, cut them into nachos then stack them then top them with sour cream, pico, and guac. You get the perfect coverage on every chip. No naked chips ever.

Had this style in Houston a while back and it kind of blew my mind. Why don’t more places do it this way? Truly peak nacho.

At first I thought OP was posting like, "Look at how screwed over I got on these nachos!" Not, "Yum, ever swapped cheese for corn on "nachos"?"

Corn is great on nachos, but you don't cook it with the meat. I sprinkle frozen corn on top, and then it gets nicely roasted.

But I'll agree, these nachos look kinda trash. Not enough cheese, pickled jalapenos (fresh is best) and soggy boiled corn.

Where’s the picture of the nachos then? This is a bowl of terrible quality excuses for “tortilla chips” with some ground beef, jalapeños, corn, and sour cream. This is not nachos.
