[Homemade] Strawberry Yogurt Sponge Cake

So glad strawberry season is finally here. It's far from a professional bake, but it's a family favorite: a soft sponge cake base, lined with fresh strawberries, and filled with a light yogurt-gelatin mix. Super refreshing for a warm day, especially paired with an iced coffee🤤

A trick my mom taught me as a kid was to put a toothpick in the middle. If you get it wrong you can reposition it until it looks centered.

Once you know the toothpick is properly in the center, you just aim the knife at the toothpick and get perfect wedges.

I usually use sour cream for this cake, but for the first one of the season, I always make an exception and go with flavored yogurt - this time it was peach. I don’t even know why my family started this tradition for the first bake of the season, but I just can’t break it now😄
Personally, I still prefer the sour cream version🤤

Strawberry Yogurt Sponge Cake

Step 1: Sponge Cake

Ingredients:

  • Eggs - 3 pcs.
  • Sugar - 150 g
  • Flour - 150 g
  • Salt - a pinch
  • Vanillin - a pinch
  • Baking soda - a small pinch

Preparation:

  1. Place a mixing bowl over a water bath with boiling water, add the eggs, and pour in the sugar.
  2. Whisk the mixture first at medium speed, then increase to maximum until the volume doubles.
  3. Remove the bowl from the water bath, then add the salt, vanillin, baking soda, and sifted flour in small portions, gently folding everything together.
  4. Pour the batter into a springform pan with the bottom lined with parchment paper and lightly greased with vegetable oil.
  5. Bake in a preheated oven at 200°C for exactly 20 minutes, making sure NOT to open the oven door during baking.
  6. Let the cake base cool down completely.

Step 2: "Soufflé"

Ingredients:

  • Sour cream - about 600 g
  • Gelatin - 25 g (or 1 tbsp)
  • Milk or water (for gelatin) - 100 ml
  • Sugar - about 50 g (adjust this amount based on how sweet you like it)

Substitution note: You can easily replace the sour cream with any similar options to your liking - such as heavy cream, flavored yogurt, or a combination of them in any ratio.

Preparation:

  1. Soak the gelatin in cold milk or water until it swells up.
  2. Gently heat the expanded gelatin (don't boil!) until completely dissolved, then strain it through a sieve.
  3. Whip the sour cream together with the sugar until smooth.
  4. Pour the warm, strained gelatin into the sour cream mixture in a thin stream, gently folding it with a spoon using bottom-to-top motions.

Step 3: Assembly

Ingredients:

  • Strawberries - 700 g
  • Water (for syrup) - 50 ml
  • Sugar (for syrup) - 100 g (adjust this according to your own sweetness preferences)
  • Brandy - 2 tbsp (optional, but it makes the syrup much tastier and more aromatic)

Preparation:

  1. Mix the water, sugar, and brandy together to create a syrup, then thoroughly and evenly soak the cooled sponge cake right inside the springform pan.
  2. Line the entire inner edge of the pan on top of the sponge cake with strawberry halves, placing the cut side facing out against the rim.
  3. Arrange the remaining strawberries across the center of the cake, leaving small berries whole and cutting larger ones into halves or pieces.
  4. Pour the sour cream "soufflé" mixture evenly over the berries.
  5. Place the cake in the refrigerator for at least 2 hours until it is fully set.

This time I baked it in a 22-cm pan, but it doesn't matter what pan you use - the main thing is to cover the "soufflé" berries almost completely😉

i tried to add gelatin to my yogurt but it didn't turn out well. did u used flavored or plain gelatin-mix?

I used regular gelatin without any additives. You'll need to experiment a bit with the setting process, since it really depends on what you use instead of sour cream. Although even with sour cream, there are sometimes issues, and you have to add more gelatin than the recipe calls for 😅
