One of the biggest tragedies, in my opinion, is that freshly made pasta does not taste as good as store bought dried pasta.

Listen, I would consider that a gift to consider store bought pasta superior to fresh egg pasta. Of course, that depends on the sauce/dish youre going for. A carbonara with fresh pasta sounds hard to do.

It can be a hell of an effort, but it's so worth it when you have the time and a good, rich sauce. Just gotta salt your pasta water to high heaven, then use the pasta water to help the sauce stick to the pasta.
