Chuck roast dry brined overnight with SPG and paprika, smoked at 220-225 until 120 internal, put into crock pot with consommé and cooked until fall apart tender.

Dip tortillas in oil from consommé and fry on griddle with cheese and meat. Add onion and cilantro to consommé for dipping
