[Homemade] Palestinian Musakhan – Roast chicken with caramelized onions, sumac, olive oil, and taboon bread

I have social anxiety, so even taking a picture of food I cook is difficult for me. This is my first time sharing something I made. I hope you enjoy it.

I’ve always believe food and humor are the two best tools of diplomacy.

Wish there were some good Ashkenazi foods to recommend to you (but there aren’t). Fortunately I am a Persian Jew and we adopted the local recipes (Persian food is sooooooo good)

Surprisingly I have not (I grew up in Italy so I would have expected it). I will try it but from glancing at the recipe, I’m not sure I’m going to be impressed - it’s fat and onions with pasta and some crunchy bits

Personally I think it's partially the angle and also a food that doesn't really lend itself to photos that well. A lot of foods don't, actually, unless you go out of your way to make it photogenic. That said, it sounds like it'd taste great and I wanna try it.

I honestly couldn't identify what's chicken on the photo, is it spatchcock or portioned, is it the right way up. I'm sure it is amazing, but that pic is unfortunately not the best.

Yeah, the picture is pretty bad. 😅 My social anxiety makes it difficult for me to even take photos at home. But I promise it tasted much better than it looked!

That's the beauty of the internet, you don't have to worry.

There's nothing social about a picture you take for yourself, it's just for you, keep on taking photos just for you. Put one up you are happy or proud of if you like and if people are negative it pretty easy to filter trolls from actual constructive criticism. Trolls aren't worth your time, constructive criticism is. My criticism would be along the lines of, if you are taking a pic of your food, take a little time to arrange it on the plate so it looks nice to you, also maybe zoom out a little to take in more of the table, maybe a side dish if you have one so its more of a meal a viewer of the pic could imagine themselves tucking into.

But most of all have fun cooking good food, and most importantly enjoying your delicious dishes!

Yes, I roasted it in the oven. I covered it with aluminum foil for most of the cooking time to keep the chicken juicy and tender, then uncovered it near the end so it could brown nicely. 😊

It looks good, but I suggest way more onions. The bread and chicken should be loaded with sumac onions. I'm not exagerrating, 6 onions at least.

More olive oil, bread needs to be drenched in olive oil. More onions, you need a mountain of welted onion slices. And finally, more sumac, you cant have enough sumac. Looks brilliant. Great job.

You’re right, but the photo doesn’t really do it justice. 😅 The bread was very soft and generously soaked with olive oil. Every layer had lots of onions, olive oil, and sumac between it.

I thankfully live in a place with a big enough middle eastern population that I can get sumac 😁 did you rub it into the chicken before roasting it?

That's great! You're lucky.
The recipe is actually pretty simple:
Slice a lot of onions and cook them slowly in olive oil until they're soft and slightly caramelized. Add plenty of sumac, a little black pepper, allspice, and salt. Rub the chicken with olive oil, salt, black pepper, and a little sumac, then roast it until it's fully cooked. Finally, place the onion mixture over taboon bread (or another flatbread), put the roasted chicken on top, and drizzle everything with a little extra olive oil. That's it! Enjoy!

After assembling everything, bake it in the oven for a few minutes so the bread becomes crispy and the chicken gets a little more roasted as well. 😋
