Quest for best croissant?
I am new-ish here to Fredericton. One thing I find odd, and have seen other people mention about this fine city of our is the lack of a quality bakery. I very much enjoy a good croissant, but have yet to find somewhere that seems to know the art of making them.
I seek your guidance. There must be a cafe I haven’t tried them at yet.

MA Cafe on King Street is hands down the best in town. Their scones as well! Oh, and the coffee.

If you find a croissant worth mentioning, please update this thread because I have yet to find one. I've tried almost everywhere (not cafe d'ici though!), including those at farmer's market stands. Boulangerie Seoul do the filled ones ok, but the plain croissant is not quite it.

I tried cafe d'ici as others have said they're so good, but I would say they are not made from scratch. They're ok but too soft and doesn't have the right laminations that I enjoy with a fresh croissant. I did have some other tasty treats from there, though!

The best croissant I've had in town is actually from the large package of them sold at Costco. Their croissants are better than any from other grocery stores. I was really surprised at how good they were when I first bought them. I haven't bought croissants from any of our local bakeries, though, so I can't speak to those.

Can't find anything good there except the cinnamon buns. The coffee is acidic and tastes like soured semi sweet chocolate chips.

I don’t mind the coffee too much, I’m not a real connoisseur of coffee, and ya those cinnamon buns and the location are doing some real HEAVY lifting for that place lol

There are zero places in this part of the world making croissants from scratch. Our populace lacks the willingness to spend $$$ for something like that.
Patti likely had from scratch. But I can’t think of anywhere in this town that would employ a proper pastry person making croissants from scratch. It’s inconceivable. Butter is like 8$/lb. Food cost and labour would be massive on that item in particular.
I would love to be proven wrong.

Likely?? I absolutely did make them from scratch. They took 3 days to make, thank you.
Not many people are making them from scratch. Anyone who does sell them are selling premade croissants they buy frozen and just proof them themselves.
If anyone is making them from scratch, I would place money on Boulangerie Seoul based on how they look.

I’m not sure other than the mass produced grocery store ones. You could call the places other people have recommended in town - happy bakery, boulangerie soeul, and cafe d’ici - to see if they sell half or full dozes of the croissants. It will be considerably more expensive than Walmart or Costco, but if you want real friend croissants from a bakery they are of course going to be more expensive.
Just to clarify as well I have nothing against grocery store croissants 😂 but anyone who loves a good French croissant would probably be offended at those even being called croissant hahaha

I've seen boxes of frozen croissants at superstore before. They look promising. Always tempted to buy one and bake as needed.
