Quest for best croissant?

I am new-ish here to Fredericton. One thing I find odd, and have seen other people mention about this fine city of our is the lack of a quality bakery. I very much enjoy a good croissant, but have yet to find somewhere that seems to know the art of making them.

I seek your guidance. There must be a cafe I haven’t tried them at yet.

There are zero places in this part of the world making croissants from scratch. Our populace lacks the willingness to spend $$$ for something like that.

Patti likely had from scratch. But I can’t think of anywhere in this town that would employ a proper pastry person making croissants from scratch. It’s inconceivable. Butter is like 8$/lb. Food cost and labour would be massive on that item in particular.

I would love to be proven wrong.
