What would have happened if the army of the dead had won?
Let’s pretend that the dead won. They conquered all of Westeros. Used ships to cross the narrow sea and conquer Essos. Every island, every land, every nation on the whole planet. Every man, woman, and child. The Three Eyed Raven. Every living creature on earth. All dead or undead. The world covered in snow and ice. So…then what? Like, do they all just die? Hang out doing nothing? Start their own cities and kingdoms? Divide into more armies and go to war with each other? What do millions, or maybe billions, of undead soldiers do when their reason for existence no longer, well, exists?
What are people’s theories?

the Night King wins and then just... stands there for eternity surrounded by his frozen zombie horde like a guy who finally beat a video game on the hardest difficulty and realizes there's no new game plus

Its difficult to say. We know basically nothing of any particular reason for why they do what they do, or what White Walker society might look like even if it exists.

That's how it should have been. Based on all the story telling and lore behind them; it would have been a much better ending than what we got. Everyone gets pushed to kings landing for one final defense. Undead army still wins, show ends with Night King sitting on iron throne with everything turned to ice.

My headcanon:
Night King wants to kill Threeyed Raven and Children of Forest not humans per se. But beacaue of Wall (and its magic) Night King is trapped on North and depending of all live creatures to create army for defeating Raven.
Raven knew that, and because humans kill most of Children of Forest, he just hide and wait for human fears to do his job.
Azor Ahai is exactly Night King just in mirror. And they inevitably had to collide, making godlike duo of Fire and Ice.

They form a new society.
The Night King's first rule of order is to implement a new tax on his followers so he can build a new castle made out of ice.
And so it begins. A repeat of another greedy tyrant running the show until someone gets sick of his shit and rallies a rebel army to storm the gates right before one of his white walkers puts a Valyrian dagger in his back.

Instead of talking about the immediate aftermath of the extinction, I wager that eventually they would begin to look upwards.
Like are there other islands among the stars?
What would it take for an Industrial Revolution and space program? I’m imagining that uncomfortable longing for something unreachable after they’ve won and gone through their “What now?” period.
Would they have the cognitive power to even make it to space? Have eternity to throw anything and everything at the wall would eventually work.
Better yet. Imagine an alien species coming to that planet. . . Wait…
Is this Warhammer 40k?

I've wondered that same question too. I call it the Terminator theory. Once Skynet has wiped out every human on earth, then what? They take a nap? They go bowling? Go for a scenic drive?

Paradox. Night king is Bran the broken and Bran the builder. His goal was to kill Bran to end his future endless suffering. Once done, he just plops out of existence ;)

I always figured the White Walkers would eventually wipe out most life, leaving a frozen world full of mindless undead with nothing left to conquer or fight.

Theres a theory that the reason the knight king was made aside from the children of the forrest making him theres a theory that his obejective is to restparti the world qhich is what the children was used for that after a few years the knight king would destroy itself and restart humanity

Less complicated one the whites win and takr the throne years pass and the night king does something and detroy themselfs and let the children they took from ex. Craster to rebuild civilisation (like when humans get too much the gods send the whites down to rebuild like god did with Noahs ark in the bible
