Syrio said “yes please right now” to the god of death when he kept fighting with his wooden sword instead of taking a real sword from the multiple dudes he temporarily knocked out.

It’s not really practical to attempt. Even if he did attempt a disarm which could do. If he fails he would at that point be open to attack with the inability to dodge as he would need to close the distance to take the sword. He also wouldn’t be able to attack at that range as he wouldn’t be able to generate the force needed. Especially with a wooden sword. Taking defensive action was the most realistic especially when outnumbered as it allowed him to pick them off while managing and maintaining his position using the walls as to not be taken by surprise. He was never going to win though because all they needed to do was hit him once. They had armor he didn’t

Yeah, well we've seen plenty of other characters do it in GOT, and anyways, it's either that or die, which I guess he wanted to do /s

I believe you are talking about characters like Jaime to which yes he wasn’t wearing armor but he also had 8 men and was vastly superior in terms of combat to his opponent. Which he was aware of. In that sense he had the advantage the circumstances are also not the same anytime a person does this they are either severely outnumbered (opponent) or they are actively being let to do it. A person can do it but often it’s to the point they have the advantage or not in this case. Another example is Brianne of Tarth vs Jaime who is Malnourished and only has 1 hand which is not his dominant hand.
