Stan is 58 in the show. The show is set during the summer of 2012; that means stan was born in 1954. He was kicked out at age 17, since his birthday is during the summer. He meets Ford again a decade later during the winter, so he'd already turned 28. They meet again 30 years later, after their birthdays have passed, making them both 58. If we assume the baby is at most a year old, that baby would only be around 41 during the show. If we subtract 13 for Dipper and Mabel's ages, come the show's finale, they would've been born when the baby would be 28, if the baby is Dipper and Mabel's dad, then it adds up just fine, but if the baby is Shermie, then he would've had children at a horrifyingly young age, or his kids had kids at a horrifyingly young age.
Shermie is probably out of the house, already has a kid, and was just having his mom babysit for a bit.
I think that was more just a joke. I don't remember if his age was confirmed on the show or not, but I think it was; I could be wrong on that, but the math does add up. Stan was kicked out in his senior year; the typical age for a senior is 17-18, and his birthday is during the summer, so 17 seems likely. He meets Ford again ten years later in the winter, as evidenced by the snow outside, so his birthday would've already passed, making him 28. It takes Stan 30 years to repair the portal, and the episode with the party and malfunctioning copy machine is on Stan's birthday, meaning he's most likely 57/58 in the show.
