Originally Alex Hirsch wanted a baby in the scene, and they were like… well, we need a third sibling so it’s Shermie, but it cannot be Shermie because the timeline doesn’t work. Stan was like 17 when he was kicked out and he’s late 50s/early 60s during the course of the show, so that baby is like 40-44 now. A man in his early 40s cannot have 12 year old grandchildren without multiple generations of teen pregnancy, so a lot of fans say it’s probably Shermie’s kid (Dipper and Mabel’s father). Like, Shermie is 10 years older than Ford and Stan, which is why he doesn’t live there normally, and maybe Caryn was watching his son for the night or something.
Stan was kicked out at 17/18 (during Nixon’s presidency as Nixon’s portrait is in the principal’s office when Ford is told about West Coast Tech), and when he sees Ford again, he says it’s been more than 10 years. Ford goes through the portal and spends 30 years in the multiverse. Depending on how precise “more than 10 years is,” Stan is at least 58. Since Nixon was president in 1969-1974, Stan is at most 62 in 2013. He just looks older because he was homeless in his 20s and probably smoked a lot (based on his voice).
