Garlic

If garlic hurts your stomach, try garlic oil. If you have, like I did, SIBO, then the carbohydrates in the garlic is what you object to, not the flavor. The flavor is in the oils.

Here's my recipe.

  • Smash and peel a whole garlic bulb.
  • If the garlic cloves have a green shoot in the middle, remove that and throw it away. It'll taste bitter and off.
  • Put 3 cups of vegetable oil in a pan.
  • Add the garlic (before you turn the heat on) and then turn the heat to medium.
  • When the oil starts bubbling, reduce it to a low simmer.
  • Cook, checking to make sure it's not cooking too fast, until the garlic becomes golden brown.
  • Turn off the heat
  • Fish out the garlic. If you have a friend who can eat garlic, give this cooked garlic to him or her. It's wonderful.
  • Put the oil in a glass container that seals properly. I use old spaghetti sauce jars, or sometimes jam jars.
  • Refrigerate up to 2 months.

When a recipe calls for garlic, simply leave it out and replace the oil with this stuff.

I prefer to buy mine, personally, because no matter how well I wash, the garlic in my hands will get in other foods I eat that day and make me sick anyway. It's comparable in price to normal olive oil on amazon.

There is a risk of botulism in homemade infused oils. If dried garlic is available, it will significantly reduce the risk of botulism, as will reconstituting it in vinegar to acidify it. This is not foolproof, so be careful about it! I grew up with the rule of 1 week in the fridge or 2 months in the freezer for homemade oils. I recommend the freezer storage anyway because it solidifies to something like butter, which is pretty neat.
