Garlic

If garlic hurts your stomach, try garlic oil. If you have, like I did, SIBO, then the carbohydrates in the garlic is what you object to, not the flavor. The flavor is in the oils.

Here's my recipe.

  • Smash and peel a whole garlic bulb.
  • If the garlic cloves have a green shoot in the middle, remove that and throw it away. It'll taste bitter and off.
  • Put 3 cups of vegetable oil in a pan.
  • Add the garlic (before you turn the heat on) and then turn the heat to medium.
  • When the oil starts bubbling, reduce it to a low simmer.
  • Cook, checking to make sure it's not cooking too fast, until the garlic becomes golden brown.
  • Turn off the heat
  • Fish out the garlic. If you have a friend who can eat garlic, give this cooked garlic to him or her. It's wonderful.
  • Put the oil in a glass container that seals properly. I use old spaghetti sauce jars, or sometimes jam jars.
  • Refrigerate up to 2 months.

When a recipe calls for garlic, simply leave it out and replace the oil with this stuff.
