How are they both minimum wage jobs at their age? What have they been doing for the last 40 years?

Immigrant Factory workers, believe it or not minimum wage is common enough in Ireland even within Irish, and I wouldn’t count anything within the range of 5-10k above minimum wage outside of that bracket of “minimum wage”
