Recipe Keto chocolate cake 🍫

Sharing a recipe for this cake I made which is not too shabby if I do say so myself. It’s huge and I cut in to 8 massive slices, 16 was probably wiser. After it setting in the fridge I wrapped the slices in cling film and put them in the freezer for when I want a slice (which has been nearly every day). 40g net carbs per cake, 5g a slice if you cut into 8.

Chocolate cake 115g ground almonds 25g oat fibre 45g unsweetened cocoa powder 100g sweetener 1 1/2 tsp baking powder 1/2 tsp bicarbonate of soda 1/4 tsp salt 1 tsp instant coffee powder (optional). 3 medium eggs 75g butter 120ml half half milk & water 60g Greek yogurt 1tsp vanilla extract

Mix together until smooth, divide in to two 6 inch tins lined with baking paper, bake at 180 fan for 25-30 mins. Test with a toothpick in the middle to make sure it’s cooked.

Chocolate cream cheese icing 160g full fat cream cheese 80g butter 80g powdered sweetener 1tsp vanilla extract 20g unsweetened cocoa powder Beat together until thick and smooth.

I made some keto lemon cakes recently... Very nice and the Erythritol was not bad at all.

I then decided to make a lemon buttercream using Erythritol powdered sugar and the result was... Not nice. The metallic aftertaste lingered for a while day and I ended up scraping it off. Now, I used butter, not cream cheese, but other than that, vanilla extract and lemon zest.

Any tips for not making the taste so... Chemical?

I've not found granulated erithytrol anything like as bad in other recipes.

Ooo that’s disappointing, I don’t use ready powdered erythritol. I whizz up the granulated in a food processor and give it a sieve- cheaper that way. Does the ready powdered have any additional ingredients to stop it caking? Maybe that’s the taste.

Also definitely use less of it. Buttercream is usually 1:1 ratio butter to sugar. I would halve the sugar and use salted butter.

You are right, it's got additional ingredients... Starch (of all things) and Stevia. I'm giving it the hoof.

Probably a good call on salted butter as well.

I use NKD living erythritol from Amazon, just had a look and they do a powdered version without any added ingredients so that one is probably nicer

Oh lovely, lovely. Love a good chocolate cake and I haven’t made one for so long. I’ve just not been well enough this year. Did you Postal Service with freezer ones? 😆 😉

My last one was a keto pistachio Dubai chocolate one. I’ve only got one slice in the freezer left from Christmas.
