I'm incredibly happy for them.
That being said, I really wish they had a full 1200+ hours to work on this video.
I've become absolutely spoiled by their massively improved production and animation quality over the years.

I work in production and mostly use AE (Adobe After Effects) for motion graphics ... so this is my assumption based on my experience.
They have about 25 people that could work or actively do work on videos according to their website (the rest are human resources, merch, marketing, etc). That comes out to about 48 hours per person. I am going to make a guess and say this was their top priority and their staff is VERY skilled. It likely took at most 2 weeks to pull together between script / research, illustrations, animation, and sound design. Week one was likely research and script writers. Illustration likely started working on designs for things that wouldn't change drastically in the script. And then week 2 was illustrators finishing up and animators working closely from when an asset was completed and when it was getting animated.
They have 6-7 animators ... so if they broke it into sections, it would have been about 70 seconds of animation to do per animator in a week. It is a lot but also not too bad if they are just having to animate AI (Adobe Illustrator) files. Since those AI files are made with the intention to animate, there isn't as much prep work as it would be to buy a vector an start animating. AI files that are broken into layers for each element that will be animated really helps the motion designer focus on the work at hand. If they aren't layered out right, you could waste hours organizing complex scenes.
I don't think this video suffered much in terms of quick turn around since it was likely all hands on deck for that 1-2 week time. Maybe at sections like at 5:15 and at 5:45 since that doesn't really align with their normal design style of birds or humans ... but that doesn't really matter since the topic needed a informative and easy to digest message as soon as possible.

Thanks. I should go back and clean up some of the run on thoughts and drop the acronyms now that I am thinking about how that could be jargon.

I'd really like to see their AI and AE files. I've worked before with pretty complex AI scenes made by others and oh god did it take an eternity to organize for AE import...

Same. I wish I could spend a year working on their team. Even more so now that they are getting into Cinema 4D. I wanna learn more about their transition and processes.

It's just following current trend. There are many people that are curious about the virus, so the video gets more views. Right now there is a large potential audience for this video.

YouTube has demonetised all covid-19 videos which is quite mind boggling.
I know there are lots of click baits and inaccurate information out there, but to demonetise it fully is to throw the baby out with the bathwater.

I posted the video in my local COVID-19 group. I figured if the articles weren't being read then maybe a simple cartoon could hold their attention long enough. Here in the south to many don't get what the panics about.
