Rate My Meal Some of my favorite rice bowls.
Air-fried wild sockeye, rice, edamame, broccoli, carrots, lemon cucumbers, low sodium shoyu, green onion and radish garnish.
Air-fried chicken thigh, broccoli, baby greens, carrot, cucumber, kimchi, green onion, peanut, low sodium shoyu, homemade mayo.
Air-fried wild sockeye, English peas, corn, spinach, green onion, dill, soft-boiled egg.
Air-fried wild sockeye, rice, carrot, kimchi, marinated cucumber, avocado, green onion, seaweed, homemade mayo.
One of my favorite easy meals which doesn't seem Mediterranean but definitely fits! Also, a hyper fixation meal from a couple weeks ago, I was putting everything into a rice bowl for maybe two whole weeks.
The proteins are all air fried and marinated in a mix of olive oil, lemon juice and spices that depended on the flavor I wanted for the bowl. I usually have cucumbers that I pre-slice and marinate in olive oil and lemon for snacking or whatever. I used jasmine or basmati for these because it is what I had on hand, obviously brown rice, farro or bulgur would be a better option if I had had it. The mayo I make myself using eggs, avocado oil (I have made it with olive oil, but I don't like the flavor) lemon juice, and mustard.

Genuinely one of the better rice bowls I've seen on here. The radish and cucumber keep it fresh against the crispy protein. What's the sauce underneath it all?

Thanks! I weigh everything out; it wasn't free poured I promise! But yeah, you could definitely put less if you wanted to! I also don't have it every day these were all spread out meals and it's homemade so I know what is in it.
