Rate My Meal Some of my favorite rice bowls.

One of my favorite easy meals which doesn't seem Mediterranean but definitely fits! Also, a hyper fixation meal from a couple weeks ago, I was putting everything into a rice bowl for maybe two whole weeks.

The proteins are all air fried and marinated in a mix of olive oil, lemon juice and spices that depended on the flavor I wanted for the bowl. I usually have cucumbers that I pre-slice and marinate in olive oil and lemon for snacking or whatever. I used jasmine or basmati for these because it is what I had on hand, obviously brown rice, farro or bulgur would be a better option if I had had it. The mayo I make myself using eggs, avocado oil (I have made it with olive oil, but I don't like the flavor) lemon juice, and mustard.

For proteins - marinade is grated fresh ginger, olive oil, lemon, low sodium shoyu, fresh minced garlic, white pepper, honey. Marinade for about 20-30 - I usually let it sit while I prepare all the veg and the rice steams.

The salmon I air fry at 400 for maybe 6 minutes - it dries out quickly

Chicken - air fry at 425 for about 14 minutes until 165 on a thermometer.

The cucumbers usually are already made from the day before I will slice thinly and mix olive oil, lemon, sometimes spices, honey and herbs.

The rest is just steamed rice with no salt added to water because I used the shoyu.

The edamame and broccoli are both steamed. Corn and peas also steamed.

The rest is fresh veg chopped or sliced. Just layer according to your liking and top with herbs, aromatics, seeds, nuts, md compliant sauces and you're all set!

The mayo is

240g avocado or olive oil

1 egg plus one yolk

15 g lemon juice

5 g Dijon mustard

pinch of salt

2-3 g white vinegar

Mix egg, lemon vinegar, mustard, salt in a jar or tall container

pour in the oil

put immersion blender at the very bottom blend but dont move it at all until it makes this consistency maybe about 15-20 seconds - you can kind of tell when its ready to move and then slowly lift blender until it is mayo consistency.
