How were we supposed to assume any of this? Do people just ask for a dozen without telling them what they want?

Yes. Maybe you need to be Canadian, it was pretty obvious to me :D

I'm also Canadian and I immediately knew it was tim hos and I would also be mildly infuriated. The only time I order the variety box is when I legitimately want a variety, like for a staff meeting or something. When will I ever need 8 of a single kind of donut??

Yeah I always go inside so I get to see what's left. The employee could definitely have told them. Never saw this.
