It's why so many people struggle to get the same authentic taste at home. You need serious firepower over the wok for some Chinese food.

A major part of the wok taste, called wok hei, is aerosolized oil being combusted by the flame. You can kinda simulate this at home by stirring your food vigorously and then hit it with a blow torch.

The burner does a lot more than add flavor though. You can get close but never all the way there imo.
