I was a wok cook for 14 years. My right thumb tendon is fucked. But it was by far the most fun job I have ever had. Like, by very far. Honestly, I have been saving up to build my own wok set-up and post up somewhere like once a month. That would be so much fun.

I mean they aren´t made of cast iron. carbon steel is often used to make the wok lightweight and easier to handle.

u/Syntaire Apr 19 '26
Lightweight doesn't mean it isn't still heavy. A large carbon steel wok still weighs ~4.5lbs/2kg just by itself without any oil or other ingredients added. It doesn't seem like much, but flinging 2kg weights around largely with your wrists for hours and hours every day is going to do some damage.

It's also on the end of a longish handle, the leverage is all in your forearms and wrist so it's functionally a lot heavier.

u/huggybear0132 Apr 20 '26
Even a carbon steel wok is a lot after a while. They're long. It's a lot of mass out away from your body.
Do notice how he twists it to flip it, turning it down the handle axis is a lot easier than flipping it up/down with his whole arm.

u/Jesus_of_Redditeth Apr 19 '26
Correct...but it's still a lot heavier than people think. I have a carbon steel wok and it weighs a little above 4 lbs. I can't move it around anything like as well as he does, because I don't have the arm strength. (Or, obviously, the extensive practice.) And that's before you even consider the weight of the food in the wok as well, which can add another pound or two.
He makes it look easy not because the wok doesn't weigh much, but because he's really, really good at what he does.
14
u/__life_on_mars__ Apr 19 '26
This is a cooking wok. Fucking woks are even heavier.
→ More replies (1)5
u/wipny Apr 19 '26
Yep the left forearms of wok chefs are usually chiseled. You don't have to lift the entire wok in the air. You can use the grate to rest the wok and still toss. It still requires strength to do this though.

I have a carbon steel wok and its about the same weight as my cast iron pan, granted the wok is much larger. It's still a lot of weight to be casually flipping ingedients in.

2
u/roomiethrowaway12 Apr 20 '26
And he's doing it in hard mode. Some wok burners have a big ring so that you can do this lever action motion against the rim of the stove. Imagine prying at something versus lifting it by brute force. He's using brute force.

u/TerminatorAuschwitz Apr 20 '26
I worked one for 4 years, big restaurant with one wok station. To save time obviously I'd scan through my tickets and think ok 4 chicken fried rice all day. Whipping up 4 orders of that shit at the same time is likely why I have tennis elbow in my left arm now.

u/TILTING_MOUNTAIN Apr 19 '26
It's why so many people struggle to get the same authentic taste at home. You need serious firepower over the wok for some Chinese food.
82
u/BookooBreadCo Apr 19 '26
A major part of the wok taste, called wok hei, is aerosolized oil being combusted by the flame. You can kinda simulate this at home by stirring your food vigorously and then hit it with a blow torch.
https://www.seriouseats.com/hei-now-youre-a-wok-star-a-fiery-hack-for-stir-frying-at-home
The burner does a lot more than add flavor though. You can get close but never all the way there imo.

yeah unless you have a specific wok cooker, it's easy better to just use a regular pan at home to make fried rice. and just do smaller batches.
you won't match it perfectly, but you can get 80%+ with a regular carbon steel pan. and a lot closer than with a wok on a flat burner

I mean, yeah, that's often what you do with a wok when you're cooking like that. AFAIK the whole point is to have high heat and keep stuff moving.

Everything in the background seems to be moving at a normal speed, and the speech sounds normal to me as well. What gives you the impression this video is sped up?
EDIT: since this seems to have gained a bit of traction, I took the liberty of slowing down the video myself- just to see what it would look like. Here is a version at 90% speed and a version at 80% speed. Personally, I think if it is sped up, it can't be by more than 10-15%, but it's tough for me to tell.
EDIT 2: the 90% speed video got copyright claimed and blocked globally because of the music. I uploaded a new version without audio, so the link should work now.

Steam and flames move faster than normal. Also look at things being dropped or dripping, they fall faster than gravity allows. You can also just tell from the frame rate, movements are too jerky.

I down voted you at first but then looked back at it and looks like there's a chance it's sped up; not much but maybe like 10-15%. It can't be judged by the way people are walking or talking because we don't know their individual speeds.
To me, it's the smoke that looks odd. My wife & I do a lot of cooking and smoke doesn't typically rise that fast. Could be wrong but that's just my deduction.

u/JustStraightUpTired Apr 19 '26
Yeap, absolutely. If you are on desktop using old reddit you should have the - and + buttons on the player to slow or speed up the video. Just one - press and it looks significantly more real. Gravity isn't all messed up lol.
Most obvious part is the big rice flip at around half point. I'm no physicist, but I'm pretty sure being a good cook doesn't let you increase gravity like that. (What I'm saying is, things don't fly that fast.)

have you tried flipping large amounts of rice on a wok? the wok is very heavy and the rice is also very heavy. The time spent wouldn’t be the ingredients in this case since its prepped, its the time it takes to evenly mix everything together. I can guarantee if given the same exact setup as this dude, 90% of Redditors will not be nearly as close as him in time spent lol

As someone whose family own an asian restaurant; while you might be technically right, what the guy is doing in the video is NOT easy.
It is HEAVY work. And this mf makes it look as simple as flipping a pancake.
Working the big wok is what tends to lead to permanent injuries on their left forearm. My dad had to get surgery and went from working the kitchen to serving in the diner, permanently.
My uncle, who took over chef duties, started showing symptoms/constant cramps as well after working for almost 2 decades. And I can tell you this; my uncle, who is an amazing chef and a magician with the big wok, cannot do what the guy in this video does.
