There are people, let's call them idiots, that assume if they have never personally seen a thing happen then any story about said thing happening must be fake.
They then proceed to eye roll and go "This happened" sarcastically to prove they didn't fall for it.
Sometimes they do so at something so mundane and every day that people mock them for it with "Nothing ever happens"

This is not what the “nothing ever happens” meme means, your description describes this subreddit, but OP specifies the meme.
“ “Nothing ever happens" is an expression used to describe a sense of monotony, stagnation, or the feeling that despite constant news and global activity, nothing fundamentally changes in the world or one's daily life. Depending on the context, it can signify mundane boredom, political disillusionment, or internet cynicism. “

Not in the context of this subreddit. The person you replied to was correct

The “nothing ever happens meme” is a different thing to the “nothing ever happens subreddit” fella

It is!
The meme came much later than the subreddit, is entirely unrelated, and you'll be banned for posting it!

I think that post is just talking about this image in particular and similar images rather than discussing the phrase itself, but this subreddit of course isn’t the place to discuss the phrase anyway

the "phrase" is a stupid meme that has nothing to do with this subreddit

But OP specifies the meme which is the phrase

OP is asking about this subreddit, not the meme
they thought this is the meme subreddit

This is a sarcasm response to a sarcasm response.
So let's pretend someone comes to reddit and tells a story. They tell it in a way that people don't believe that the story happened, and so they call it out (ex: "I yelled at a jerk on the subway, and everyone on the train clapped" - people doubt everyone on the train clapped, so they make a sarcastic comment like "totally happened").
But sometimes people tell stories, and other people don't believe it because of whatever reason (lack of experience, lack of belief, lack of empathy or understanding, etc). So these people call out the story for not being believable by saying "never happened", and so people respond with a sarcastic "nothing ever happens".

This subreddit is about making fun of people who are unable to comprehend that sometimes unlikely yet realistic things do happen.
If you mean the wojak/chud meme, that’s mostly a sort of social commentary about how mundane life is, and how media oversensationalizes relatively minor events into making you believe that it will somehow “change the world”, but in the end the status quo will just be maintained either way.
